• Premium M2 grade High Speed Steel knives feature precision crush-ground 16-60° corrugations that are parallel to within +/- 0.025 mm.

• Heat treated and stress relieved steel provides high wear resistance and consistent grinding. Manufactured using the latest state-of-the-art technology and materials. Premium quality is evident in the highly polished finish.

• Our knives are flat (square) bottom, and have a presharpened edge ground to a 35° bevel.

• Length: 25"

• Hardness: 60 - 63 HRc consistent throughout the entire thickness (no soft spots)
